Nice work mate :) It's nice to see more 3d/photo panorama's other then my own 3d/panorama's

About the mapping of the fish. I think you could just photograph the fish. then add a Flat plane in your 3d model. Then add the fish photograph as a texture on the plane. (make sure you cut out the fish in photoshop and save it with an alpha channel). You turn off the casting of shadows of that plane. I don't know how to do it in cinema4d, since I use 3dsmax, but I can't imagine cinema4d not having planes or the option to turn off shadows on selected objects.
