ecard plugin - Adding a BCC to the email

I would like to see what people are saying about the pictures they are emailing when using the ecard plugin.
1. How can I add a BCC to the email and hardcaode in my BCC email address?
2. Is there a log or tracking program where I can capture the email addresses being sent from within the ecard plugin?
3. Or is there a log file that can track all the fields being entered into a log file?

BCC:
$useadminbcc = ""; parameter (ecard.php)

Log:
A simple logging function is included into the ecard.php >> $logging = "min";
You can add more variables from the form (search into the ecard.php: $logging == "min").

$fromName
$fromMail
$toName
$toMail
$toText
